Where does Kunoa source beef from?
We source beef from our own ranch on Kauai where we manage 2,000 head of cattle on 4,000 acres, and also from more than 70 partner ranchers throughout the state of Hawaii who share our standards for raising and feeding and animal welfare. Learn more about our partner ranchers.
What are Kunoa’s standards for raising cattle?
Kunoa and our partner ranchers raise cattle in a way that enhances the health of the entire system — animals, land and community. Our standards include the following:
- Kunoa branded beef is 100% Hawaii-grown and pasture-raised, which means the animals are born, raised and harvested in Hawaii and spend their entire lives grazing on vegetative grass and forages.
- Because the animals live and grow in their natural environment, they do not require and are never given antibiotics or added hormones (they have natural hormones in their bodies, of course!).
- All beef is harvested in Kunoa’s own sustainable facility on the island of Oahu, which contains equipment designed by animal welfare expert Temple Grandin.
Our practices have earned Kunoa the Animal Welfare Approved certification, which is widely recognized as the gold standard among certification programs.

What does “pasture-raised” mean?
“Pasture-raised” means our cattle are raised in synergy with the land, grazing on sub-tropical grasses and local flora and with the highest quality of life possible. Specifically, we practice holistic planned grazing, an ecology-based system developed by the Savory Institute that mimics the way wild herds of grazing animals have coevolved with the land for thousands of years. We let pastures rest and recuperate after a herd has foraged there. The manure the animals leave behind builds the soil, which feeds the plants that nourish the animals the next time they come around—a virtuous cycle that benefits the cattle and the land.
Anything worth doing is worth doing well and we firmly believe that quality is worth the wait. Pasture-raising cattle takes more time and aloha meaning the price in the grocery store reflects the care and integrity that Kunoa takes in raising our animals and providing for our communities.
Does pasture-raised beef taste different?
Definitely, and we prefer it that way. It tastes the way beef should. Instead of a muted, corn-fed flavor, you taste the terroir, the essence of the land our cattle was raised on. Pasture-raised animals like ours get more exercise than feedlot-raised animals, which makes for lean and flavorful meat.
What cuts of beef do you offer?
It is our kuleana to ensure that respect is shown to the entire animal that is going to feed our communities. Finding a use for every cut is extremely important to Kunoa and luckily chefs and home cooks in Hawaii are able to cook and utilize every cut, from ground beef to tongue, oxtail to tenderloins, ribeyes to chuck rolls. If there is a particular cut you’re looking for, chances are we have it. There are some limitations to what we are able to produce, but we are always growing and striving to deliver the most delicious and creative cuts available.
How do you package your products?
We package all our meat ourselves at our facility in Kapolei using an airtight, vacuum-sealing method that locks almost all oxygen out of the package. In the absence of oxygen, a protein in meat called myoglobin has a purplish color. When you open the package, you’ll notice that the color changes to the bright red we usually associate with raw beef. This process is called “blooming” and is completely normal and expected. We use this packaging method because it extends shelf life and keeps the meat fresh for longer without the use of gases.
What is a beef bar?
Our Beef Bar is jerky evolved. We take our incredibly lean and flavorful 90/10 ground beef, blend it with a mix of organic spices and seasonings and then cure it into a bar packed full of natural protein.
Why is it important to buy Hawaii-raised meat?
Hawaii imports nearly 90% of its food and 97% of its beef. This dependence leaves the local economy vulnerable to swings in pricing and availability. Additionally, with only a few days of supply on local shelves, anything from extreme weather to global political events could cripple the local economy and threaten the safety of all who live in and visit Hawaii. Buying Hawaii-raised meat helps us move toward a food-secure future, keeps more money in Hawaii’s economy, and creates jobs for our neighbors.
